This dish is traditionally served on Fridays
in the Carr/Ross household.
Bake a Safeway Ciabbatta loaf. Cut down the middle (i.e. to give a top and
bottom half.
While baking, put a whole bulb of garlic in the oven.
Slice an aubergine into several slices, lengthways. Sprinkle
or brush with
virgin olive oil. (It's OK, Ali. Any old olive oil will do.) Cut a red
pepper into strips. Cut some scallions into lengths. Grill the whole lot
until the aubergine is browned, turning as necessary.
On one half of the ciabbatta, spread garlic. The cloves will
pop out of
their skin when squeezed and will be soft enough to spread. On the other
half, a little pesto.
Make a big sandwich with the grilled ingredients, plus a little
sea salt, and
plenty of coarsely grated fresh parmesan. Or, even better, pecorino. Cut in
two.
Serve with a side salad, a bottle of red wine and an episode of Friends.

to this meal:
Two Safeway brownies, microwaved and served with Mackie's vanilla ice cream.
