I don’t think we’ve had much from South America yet, so here’s Ajaico Bogotano, a soup from Colombia.
Take some sweetcorn. Fresh, ideally, cut straight from the
cob - but frozen will do. About 2 cups. Crush one cup, leave the other whole.
Also, two cups of diced potatoes. Ideally use a mixture of different types.
A red, floury one such as Kerr’s pink, a waxy new one, a fully flavoured one
- to my mind you can’t beat King Edwards..
Sweat a little diced onion, one diced tomato and some finely chopped red pepper in some butter. Add a little ground cumin, plus a dash of chilli, if liked.
Bung in the spuds and corn. Continue to stir and sweat a few minutes.
Fill up the pan with half vegetable stock and half milk.
Boil until the floury potatoes are starting to dissolve. Season to taste.
Serve topped with chopped coriander, jalapenos and some crushed tortilla chips.
