A week of Italian recipes. The intention is to start with soup, and go all the way through to dessert. There will be at least one guest recipe (Ciao, Eduardo. Come sta?), plus an interesting way of using up surplus grappa.
As eaten by robust Tuscan peasants.
Chop a large onion very finely. Saute in a little olive oil. Cover the pan tightly and cook gently until the onions are thoroughly caramalised.
Add a couple of diced, floury potatoes, two chopped celery stalks, a chopped carrot, a tsp. Of oregano and about three crushed cloves of garlic. Continue to saute.
Take a can of chick peas (or, in this context, garbanzos.) Mash half of them. Chop two tomatoes and a generous handful of spinach. Add the lot to the pan. Top up with stock. Add one tbsp. rice.
Cook until the rice and potatoes are all but dissolved.
Serve, ideally topped with slices of fontina cheese, or similar, with hunks of good Italian bread on the side.
