Happy Diwali

Since today is Diwali. The Festival of Light, we bring you a change to our published schedule - a temporary suspension of Maghrebian week to bring you not one but two unusual curries.

Banana Curry (for Mike)

Take some bananas - the greener the better. Cut into 1 inch sections.
Cut up some onions, chunky
Chop at least one green chilli, plus a good amount of ginger. (lots of chilli advisable - the taste of green chilli complements bananas beautifully).
Heat some oil in a pan.
Add a big pinch of asafoetida and some salt.
Throw in a good tsp. Each of black mustard seeds and cumin seeds.
When they start to pop, add some curry leaves, then onions, ginger, chillis. Cook a little, until the onions begin to soften - but not too much.
Throw in the bananas. Fry vigourously, until things are beginning to catch a little.
Throw in some chopped, fresh coriander. Heat a little.
Serve.
