Char an aubergine (i.e. either stick straight onto a gas flame
or put under a grill until burnt all over.
Let it cool a little. Peel off most of the skin (a few stray bits don’t matter).
Chop the flesh.
Chop some waxy potatoes
Heat oil. Add finely cumin and mustard seeds, then, when they pop, finely
chopped onions, ginger, chilli, garlic (lots). Plus a tsp. of turmeric. Fry
until soft.
Add the potatoes. Continue frying.
After a few minutes, add the aubergine, plus a couple of chopped tomatoes.
Add a little water. Cook until potatoes are done. Turn up the heat to boil
off any excess water.
