Sorry, no recipes for a few days on account of I’ve been a little poorly. Let’s continue with a Maghrebian favourite. This time a Sephardic dish, from the Ladino speaking Moroccan Jewish community. Ladino is a version of Spanish, in much the same way that Yiddish is a version of German. Under the Moors, Jews, Muslims and Christians lived in harmony in Spain. After El Cid and all that, the Jews were expelled by the Inquisition. Small pockets of Ladino culture are still found in Morocco, Greece and Turkey.
Take some of the smallish aubergines you find in Asian shops.
Cut in half lengthways. Brush with a little oil. Grill.
Cover the base of a shallow oven dish with sliced mild onions or shallots.
Lay the grilled aubergines on top.
In a saucepan, heat up some vinegar, honey, a crushed garlic clove, some salt,
a couple of chopped tomatoes and some water, a little cinnamon. and/or allspice
to make a thickish sauce.
Pour over the aubergines.
Bake in a moderate oven until nicely congealed.
Serve hot or cold.
