Good plain home curry
As requested by Ali "Mad Bag" Mailey, here's the curry I made the other night. It's quite similar to an aubergine dish I mentioned back in "Hot 'n' Spicy Week" back last year,
First smoke your
aubergine.
EITHER
- Aubergine, naked gas flame, turn until charred all over.
OR - Grease lightly, baking tray, hot oven.
Leave to cool.
Remove the charred skin and chop up the flesh.
Heat some oil in a frying pan.
Add some cumin seeds, black mustard seeds and salt.
When they start to pop, add a spoonful if turmeric.
Stir once. Then add the following - all finely chopped:
An onion
A couple of cloves of garlic,
Some ginger
A tomato
One or two chillis (to taste).
Stir around a while.
Then add some quartered new potatoes.
Stir until coated.
The aubergine
flesh - ditto.
A can of chick peas.
Barely cover with water. Cook until the potatoes are tender. Then turn up
the heat and boil off any excess water. Finally, stir in a good lump of butter.
Top with fresh coriander and serve with chapattis.
HA! Fooled you! I bet you were all expecting Italian Desserts today.
