Gâteau Pithiviers: Pig-out à la français.

....a delightful French confection, not advised for those with a cholesterol
problem.


4oz ground almonds,
2oz butter
2oz caster sugar
4 egg yolks
A generous measure of brandy.

Beat to a paste.

Roll out two sheets of puff pastry. Get two side plates, one about an inch
or so wider than the other, and use these to cut out 2 circles.

Pile the paste into a mound in the centre of the smaller one, and lay the
larger on top, so that it drapes over and the mound and the edges can meet.

(Here's the tricky bit, which is hard to describe in words).
Take a table knife. Using the wrong side, pull up the two edges seal them
by pinching either side of the knife. Repeat this every inch or so all
around the circumference, to give a sort of 3D scalloped edge.

Then, using the point of a sharp knife, score a radiating pattern into the
top, like the magic rays from the Tellytubbies' windmill.

Bake. Probably gas 5/ 350 f for about 20 mins. I'm not that good at baking
times. Cook it until it's all risen and golden.

Remove from oven. Dust with icing sugar. Bung under the grill until the
sugar melts to a glaze. Careful not to let it brown.

Serve warm with a little cream or crème anglaise (= posh custard).
